Sometimes I can have a certain craving, I had one today. Most cravings are brought on by a familiar smell or picture, this one was actually brought on by necessity. The necessity of keeping inside the amount on your bank account that is.
When this situation arises, it is not always a bad situation for me. It forces me to take out everything I have in my cupboard and go experimental or finally eat that pasta I put in the freezer two weeks ago. But today I had an ingredient to work from. A bunch of carrots laying around in my fridge. And suddenly the craving was there, a craving for a carrot couscous salad.
This salad is really easy to make, does not involve any chopping and requires one bowl, one pot and a bowl to make the dressing. The taste however is a lovely balance between the sweet taste of the couscous with the salty spicy aroma of the dressing.
Couscous salad with carrot
Side dish for two – 15 min
- 100 gr couscous
- 4 small carrots
- 100 gr frozen green peas
- Tbsp. vegetable bouillon powder or half a cube
- Handful of basil
- Handful of toasted walnuts
- Pepper and salt to taste
Dressing

1/3 apple cider vinegar
- 1 teaspoon dark soy sauce
- ½ teaspoon honey
- ½ teaspoon spicy mustard
- ½ teaspoon tahini or sesame oil
In the meantime put the couscous and bouillon powder in a
bowl and mix. Cover with around 150 ml water. Stir to get any lumps undone.
Rasp the carrots in the same bowl with the couscous. Cut the
basil leaves small and add. Stir.When the green peas are done, add to the bowl. It is fine is some fluid comes along.
Mix the ingredients for the dressing until well combined. Drizzle over the salad and stir well.
